Winemaker’s Notes

This bright and refreshing Rosé has vibrant pink and purple hues and aromas of raspberry and strawberry complemented by hibiscus and rose petal. Cranberry, pomegranate, and watermelon flavors follow on the palate and lead to a mouthwatering finish.

Winemaking

The 2022 growing season began with budbreak in mid-March through early April, followed by abundant shoot growth in May. Early summer brought nice warm days and cool nights with veraison occurring mid to late July. Temperatures remained relatively even through the start of harvest and into August. Early September brought a heat wave that caused us to accelerate the final stages of the harvest to catch the optimum ripeness. The vintage created bright fresh wines with vibrant varietal flavors and textures.

After achieving the desired flavors on the vine, the fruit was harvested in the cool morning hours in an effort to preserve the delicate flavors. Upon receival in the cellar, the fruit was both hand and optically sorted then left on skins for a few hours to achieve the lovely pale pink color and elegant fruit flavors. All fermentation was completed in stainless steel tanks at cool temperatures to maintain and enhance the natural flavors. The final blend was completed soon thereafter to capture the delicate youthful aromas and flavors that we see in this Rosé.

Parcel By Parcel

Our winemaking and vineyard team have a broad selection of soils and topography to choose from when selecting ideal vineyard sites at Dollarhide. Each parcel is planted with fruit quality and distinct character in mind. These parcels are then farmed individually so that the vines will thrive in their distinctive locations. Our team is able to match the right soils with the optimum combination of rootstock, clone selection and cultivation practices. The diversity of terrain results in a wide selection of fruit characteristics with which our winemakers work in producing estate sauvignon blanc and cabernet sauvignon, estate blends and the Dollarhide Estate single vineyard wines.

Sustainability

As a 100% estate grown, sustainably farmed winery, St. Supéry has 1,595+ acres of land with two thirds left in its natural state encouraging biodiversity. From the very beginning, we have farmed and operated as stewards of the land with preservation is our top priority.
