Grilled Halloumi Cheese, Gremolata

Serves 2

INGREDIENTS

2 pieces Halloumi Cheese

1 clove Garlic, minced

1 Lemon, zest of

1 C Italian Parsley, leaves chopped

Black Pepper to taste

Extra Virgin Olive Oil

  1. Remove the Halloumi blocks from the packaging and pat dry. Slice them into 2 flat portions.
  2. Combine the herbs, garlic, and olive oil and coat the Halloumi cheese pieces all around and marinate for 1 hour.
  3. For the Gremolata topping, combine the minced garlic, lemon zest, and fresh chopped parsley in a small bowl.
  4. Grill the cheese pieces over a medium-hot section of the grill.
  5. Cook for about 2 minutes per side then remove to a serving plate.
  6. Top with fresh ground black pepper and garnish with the gremolata mixture.
  7. Serve with flatbread, crostini, or crusty bread.
