Quick Sourdough Blini

Ingredients

100gm Sourdough Starter Discard

125 gm AP Flour

7 oz Milk

1 Egg

20 ml Water

1 tsp Olive Oil

1 Tbsp Baking Soda

Salt, pinch

3 Tbl Butter

Instructions

In a mixing bowl add flour, salt and baking soda. In another bowl combine the sourdough starter, milk, egg and oil and stir until smooth. Add the wet mix to the dry and stir quickly until well combined and allow this to rest for a couple minutes.

In the meantime, preheat a non-stick pan over low heat, add a bit of butter to the pan and spoon the blini batter into small 2” rounds. Allow to lightly brown for about 15-20 seconds, then flip and cook until evenly browned, remove to a plate to cool then enjoy with caviar, sour cream and your favorite garnishes.
